Granola!

Gabby and I experimented with homemade granola for the first time yesterday, and it turned out sooooooo great. So much crunchier and crispier and more delicious than the bagged stuff. Here's the basic formula:

3 cups oats
~ 2 cups nuts & seeds
1/2+ cup liquid sweetener (honey/maple syrup/corn syrup/agave)
1/4+ cup oil
1 whipped egg white
salt & spices

mix all the dry stuff, mix all the wet stuff, and then mix it all together! A little bit of extra sweetener & oil will help stick it all together if you want bigger chunks (note - I went with 1/2 cup sweetener and my granola is more savory - if you like it sweeter, add more honey or stir in some brown sugar). Bake it at 300 for about 40 minutes, stirring occasionally to brown evenly (if you want it chunkier, wait longer before stirring for the first time and use more of a flipping motion to keep the chunks together).

I made two varieties, each with a base of oats, chia seeds, and quinoa:

Chocolate-Almond-Coconut: almonds, pecans, chocolate chips (mix them in after cooking so they don't melt) unsweetened flaked coconut, honey, and coconut oil



Cardamom-Cashew: cashews, pepitas, chopped dates, craisins, dark honey, fresh crushed cardamom, and olive oil


all dressed up: yogurt with some maple and vanilla, topped with banana and choco-almond-coco granola!
